Why is beer filtered?

Each stage of the brewing process carries risk: particles, microbes, yeast residues, or impurities from air and gases. With the right filters:

Avoid microbiological contamination

During brewing, yeast, bacteria and other microbes can enter the process via air, water, or equipment. If left in the product, they may trigger off-flavors, unwanted secondary fermentation or even reduce shelf life. By effectively filtering air, water and process liquids, microorganisms are prevented from entering production ensuring a clean, safe, and consistent final product with maximum brand protection

Achieve up to 12 months of shelf life without pasteurization

Pasteurization means heating beer up to 80°C to eliminate microorganisms. This consumes energy and may affect the beer’s flavor profile. Filtration offers a powerful alternative: it removes yeast and bacteria without heat, preserving the beer’s original taste, freshness, and structure.

Key Filtration Steps in Beer Production

Ultrafilter’s solutions cover all critical stages in beer brewing. Below are the key phases and the corresponding filtration applications:

Sterile Air, Gas and Steam

A sterile filter validated for bacteria, such as the Ultrafilter P-SRF & PF-PT, is used for process gases like air (H₂O), carbon dioxide (CO₂), and nitrogen (N₂). It prevents aerosols and airborne contaminants from entering the sensitive beer process during stages such as fermentation, carbonation, product transfer, cooling, packaging, or storage.

Food-grade (3-A) steam filtered through the Ultrafilter P-GS ensures the sterility of process equipment and components, production lines, and even the filters themselves, both before and after production.

1-2. Water Filtration

The brewing process begins with water, which is one of the most important raw materials in beer. Depending on the beer type, up to 85–95% of beer is water. First, coarse particles found in the water source, soil, and pipelines are filtered out. After coarse filtration, the water is typically treated using MF (microfiltration), UF (ultrafiltration), NF (nanofiltration), or RO (reverse osmosis) membrane filtration, ensuring that the process water is clean and consistent in quality.

3. Yeast Management and Clarification

Achieving crystal-clear beer typically requires several filtration stages and methods to remove haze-causing particles and yeast. Wild yeasts and yeast residues can also lead to unwanted off-flavors, secondary fermentation, and reduced shelf life. In the worst-case scenario, this may even result in a product recall.

Cellulose-based depth filters, such as Ultrasheet and Ultradisc, are versatile and cost-effective filtration solutions designed specifically for yeast removal and beer clarification.

4–5. Trap and Fine Filtration

Before the beer is transferred to a pressure tank to await bottling, it is typically filtered once more using absolute B-5000 filters (Ultrafilter PF-PP). These filters are designed to remove any remaining yeast cells and haze-forming proteins from step 3, ensuring the beer can be stored peacefully without further fermentation or clarity issues.

6. Bottling

In the last stage before bottling or canning, a membrane filter validated for beer-spoiling bacteria and yeasts (Ultrafilter PF-PES) removes any remaining spoilage bacteria and the last yeast cells present in the process. This step ensures maximum brand protection and shelf life, and guarantees that the beer tastes just as good as it looks.
